"Codscapes" at the Culinaria Research Centre

One part lecture and one part cooking demonstration, in October Sasha presented her cod research at the Culinaria Research Centre at the University of Toronto. Together with Kelsey Kilgore, Culinaria's Kitchen Coordinator, Sasha shared global cod stories in tandem with place-based recipes, cooking three iconic dishes: Newfoundland cod cakes, Jamaican ackee and saltfish, and Venetian baccalà mantecato.
